For the Batter:

  • 3 ripe bananas (preferably Nanica)
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 cup (200g) sugar
  • 1 and 1/2 cups (195g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon powder (optional)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and grease a loaf pan (approximately 20x10cm or 8×4 inches).
  2. In a large bowl, mash the bananas until pureed.
  3. Add the oil, eggs, and sugar to the banana puree and mix well.
  4. In another bowl, sift the all-purpose flour and baking soda. If desired, add the cinnamon powder.
  5. Add the dry ingredients to the wet ingredients and mix until just combined; do not overmix.
  6. If using, add the chopped walnuts to the batter.
  7. Pour the batter into the greased loaf pan.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from oven and let cool in the pan for a few minutes before unmolding.
  10. Serve the banana bread sliced.
